Why is it important to know your smoke points (the highest temp for cooking) when using oils on your foods?
Healthy oils such as olive oil, avocado oil, walnut oil, coconut oil, and ghee (clarified butter) are high in nutrients that help fight disease and boost your immunity, regeneration, and longevity, and if cooked past a certain smoking point, their nutrient contents are degraded and they become high in free radicals which can become cancerous in the body.
When choosing oils, always choose ones that are not refined or heavily processed like the ones listed above. Know their smoking points before covering your veggies with them and plopping them in the oven at high temperatures to roast.
I love using ghee instead of butter, and it has one of the highest smoking points. I also use avocado oil rather than vegetable oil‘s because it is extremely healthy and has a high smoking point! Vegetable oils can be highly processed and have low nutritional value.
