I’m back again with an easy one pan wonder dish! I adore the lemony-garlicky flavour in this dish & will definitely be making it a weekly staple! πŸ™ŒπŸΌ I love these recipes as they are incredibly versatile, cheap, healthy, filling, protein rich & delicious πŸ₯°

Ingredients:
1. 1 shallot
2. 3 cloves garlic
3. 1 can chickpeas
4. 100g garden peas
5. Handful of mushrooms, broccoli & kale
6. 1/4 courgette
7. 1/2 a lemon
8. 2 tbsp soy sauce
9. 1 pack cauliflower rice
10. Salt & pepper
11. Small sprinkle of chilli flakes

Method:
1. Heat a tsp olive oil in a pan. Add the chopped shallot & garlic cloves. Let them soften for 3-5 minutes.
2. Add in the rest of the veggies & chickpeas. Add the soy sauce and stir fry for 5 minutes. Add a splash of hot water to deglaze the pan if needed.
3. Add the cauliflower rice, lemon juice, chilli flakes, salt&pepper. Stir thoroughly for 5 minutes.
4. Serve & enjoy πŸ˜„πŸŒ±πŸ‹
