BLACK BEAN & CHICKPEA CURRY 🍛


I do love a good hearty curry, with plenty of bite and varying textures 🤩 this is a protein packed, high fibre and low fat vegan curry bursting with flavour and essential nutrients 😍 your gut will be thanking you! 😉 this recipe serves 4! 🌱


Ingredients:
1. 1 white onion
2. 3 garlic cloves
3. 1 red pepper
4. 1 yellow pepper
5. 1 – 2 red chillis
6. 200g mushrooms
7. 1/2 a courgette
8. 1 can chickpeas
9. 1 can black beans
10. 1 can chopped tomatoes
11. 1 cup vegetable stock
12. Handful of spinach
13. 2 tbsp curry powder
14. 2 tbsp mango chutney
15. 1 tsp turmeric
16. 1 tsp ground coriander
17. 1 tsp ground ginger
18. Salt & pepper


Method:
1. Start by dicing all the vegetables and preparing your ingredients. Sauté the onion & garlic in a large pot for 2 minutes.
2. Add the peppers, mushrooms, courgette, chilli, curry powder & spices to the pot. Stir and let it cook for 3 minutes.
3. Add the tinned tomatoes, vegetable stock, chickpeas, black beans. Let it cook on a simmer for 15 minutes while stirring occasionally.
4. Add the mango chutney & the spinach leaves. Season with salt & pepper. Let it cook for another 5-10 minutes on low heat. The longer you let the curry cook the more the flavours develop.
5. Serve with rice & enjoy ❤️🌱🍛
